SUGAR PLUM FAIRY CAKES
I wanted to create a really luxurious grown up cupcake so here we have the genoise sugar plum fairy cakes filled with the sweetest fruity plum jam and topped with a scrumptious snowy white Italian meringue this is truly heavenly decadent and fat free !!! yes that's correct this beauty is fat free so please endulge as much as you like and enjoy this guilt free pleasure and do as I did and eat all bar one of the little babies! so naughty I know but, I had to make sure they were perfecto, so please enjoy xxx Melissa
Ingredients
for the genoise sponge
120g sugar
120g flour
4 eggs
For the Italian meringue
200g sugar
4 plums
50g sugar
Edible glitter
Gel food colouring
Method
set your oven to 150
line a sheet pan with baking paper
To make the Italian meringue
Set a pan of water on with a bowl on top to create a Bain Marie
Add the sugar and egg whites and melt together
to check this has dissolved feel for any grain , the texture should be smooth
then add this mixture to your mixer bowl and set on high speed to form soft peaks
Add the meringue to a piping bag pipe out swirls of your choice you can add food colourings to the bag before you add the mixture if you want a swirl of colour going through your meringue
Bake in the oven on 150 degrees for 30 minutes
To make plum jam
Place the plums into a pan
Add 50 mls of cold water
let it come to a rapid boil until the fruit is soft turn down the heat mix put to one side and cool.
To make the genoise sponge
Add the sugar and eggs to a bowl and melt over a bain marie until fully dissolved and is smooth in texture
transfer into a mixing bowl on high speed until it has doubled in volume
then sift in the flour with a spatular in rotating movements until incorporated
Add the mixture into your prepared tin or muffin trays and bake for 20 minutes or until lightly golden
When the cakes are cool with a teaspoon carve a little dip into the top of each cake this is for your jam sprinkle with some sparkling edible glitter.I hope you enjoy making these show stopping delights as much I did. xx Melissa
